Wool is what I go for since its waterproof (if tightly woven and oiled!). It also remains a great insulator even when wet. However, it does take some time to dry. It's a material that's really great to work with, and there are a lot of knitting patterns out there

Wool is great but if there isn't a lining it can get itchy. I bought a cashmere hat and it was really soft and warm.
